Dear students, if you are passionate about food and company, and are also taking a General Chemistry course, then this FIG is for you! I will be your instructor for this course, and I am excited to work with you to unravel the chemistry of food and flavor. Food is a source of energy and satisfaction and it is joy to our taste buds. As we know, healthy food may not be necessarily tasty, and tasty food is not always healthy. To learn about food, especially “healthy” food, we need to understand a vast array of chemical compounds that constitute a food, and we need to unravel the flavor and texture by understanding the chemical interactions.
In addition to the FIG course, I teach the General Chemistry Lecture and Laboratory courses at UO. My favorite part of being an instructor is to work with first year college students and to see them learn and grow into competent professionals.
Outside of teaching, I enjoy reading books, taking long walks, talking to my dog in Huskish and Dognitian (my dog Stanley is bilingual J), and discussing advanced principles of negotiation (playing tug). When my dog is quiet (occasionally), I enjoy watching movies.

Hi all! My name is Maya Selesnick and I’ll be your FIG assistant for the “Chemistry of Food and Flavor" FIG. This is my second year as an FA and I’m so excited to continue my journey alongside you.
I’m originally from Carlsbad, CA, but I’ve lived in La Jolla, CA, Las Vegas, NV and Portsmouth, RI as well. I am a Marine Biology major and I’m minoring in Science Communications. At the UO, I’ve previously been involved in the GEO Study Abroad, OIMB, AEC, weightlifting club, and the PE-SCUBA class.
I have an eclectic variety of interests including writing, researching, tattoos, fantasy/mythology, spirituality, true crime/mystery and more. I’m a bit of a nerd and I like anime, video games, pokemon, and Harry Potter. I love playing and listening to music – I was a percussionist in high school and I mostly listen to rock, alternative, and R&B. I’m currently writing a book and I also run a blog all about the ocean.
